- Heat a drizzle of olive oil in a large pot over medium-high heat. Add the Italian chicken sausage and cook, breaking it up into pieces, until browned, about 7 minutes.
- Add another drizzle of olive oil to the pot with the sausage. Stir in the carrots, onion and a large pinch of salt. Cook, stirring occasionally, until slightly softened, about 5 minutes.
- Add the diced tomato, Tuscan Heat Spice and ½ teaspoon garlic powder (reserve the rest). Cook, stirring, until fragrant, about 1 minute. Pour in 6 cups warm water and the chicken stock concentrates, scraping up any browned bits from the bottom. Stir in the gemelli pasta. Cover the pot and bring to a boil, then reduce heat to low. Simmer, covered, until the pasta is al dente, about 10 minutes.
- Place 3 tablespoons butter in a small microwave-safe bowl and microwave until just softened, about 10 seconds (do not melt). Stir in 2 tablespoons Parmesan, the remaining garlic powder, chili flakes (to taste) and a pinch of salt. Split the ciabatta rolls in half and toast until golden. Spread the butter mixture onto the cut sides, then cut each half diagonally.
- Stir the spinach into the soup until wilted. Stir in ¼ cup Parmesan. Season generously with salt and pepper. Ladle the soup into bowls, sprinkle with remaining Parmesan and serve with the Parmesan toasts on the side for dipping. For extra heat, add more chili flakes.
