Kale Recipes

Kale is a hearty leafy green with a slightly earthy, peppery flavor that works in far more than salads. Its sturdy leaves hold up well in soups, stews, grain bowls, casseroles, pasta dishes, and quick skillet recipes.

Curly kale is great for chips, sautés, and chopped salads, while lacinato kale, also called dinosaur kale, has flatter leaves and a tender texture that works beautifully in soups, braises, and simple pastas. Baby kale is the easiest option for quick salads, smoothies, and last-minute additions to eggs or bowls.

For the best flavor, remove tough stems, chop the leaves, and either massage raw kale with a little oil and acid or cook it until tender but still bright. Kale pairs especially well with garlic, lemon, beans, sausage, potatoes, Parmesan, and warm spices.
