Instructions

  1. Bring a large pot of salted water to a boil. Add the cavatappi pasta and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.
  2. While the pasta cooks, heat 2 teaspoons of oil in a large skillet over medium-high heat. Add the Italian chicken sausage mix and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the kale to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes. Season with salt and pepper.
  5. Reduce heat to low. Stir in the cream sauce base, chicken stock concentrate and sour cream. Add the cooked sausage back to the skillet. Squeeze the juice of half the lemon into the sauce and stir to combine.
  6. Add the drained cavatappi to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
  7. Remove from heat. Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with salt, pepper and additional lemon juice if desired.
  8. Serve immediately, garnished with extra Parmesan and a lemon wedge if you like.

Recipe Tips

For a richer sauce, use heavy cream instead of the cream sauce base.

If you can’t find cavatappi, any short pasta like penne or fusilli works well.

Massage the kale with a little olive oil before cooking to make it more tender.

Reserve extra pasta water to thin the sauce if it becomes too thick.

FAQ

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk or water.
