- Add the ground pork to the pot with the onion mixture, breaking it up into pieces. Cook, tossing, until browned, 5-6 minutes. Season with salt and pepper.
- Once the water is boiling, add half the yakisoba noodles to the pot (use the rest as you like). If the noodles are stuck together, carefully pull them apart with your hands first. Cook, stirring occasionally, until al dente, 2-3 minutes. Drain.
- Once the pork is browned, pour 4 cups of water and the pho stock concentrates into the same pot. Add the chopped kale and soy sauce, then stir to combine. Bring to a simmer and let bubble until the kale is tender, about 5 minutes.
- Stir the drained noodles into the soup in the pot. Divide the soup mixture between bowls and serve hot.
