- Preheat oven to 425°F with rack in top position. Line a baking sheet with foil. Finely chop parsley. Grate Parmesan cheese. Halve baguettes lengthwise. Halve tomatoes. Trim cucumber, quarter lengthwise, then slice crosswise into ½-inch pieces.
- In a medium microwave-safe bowl, microwave butter until softened, about 10-15 seconds. Stir in parsley, mayonnaise, garlic powder, grated Parmesan, mozzarella, salt, pepper and chili flakes to taste. Spread mixture evenly onto cut sides of baguettes. Place baguettes on one side of prepared baking sheet.
- Using kitchen shears, cut along underside of each lobster tail, leaving meat intact. Pull shell apart to expose meat. Cut two 10-inch foil pieces. Place each lobster tail cut side up on foil; season with salt and pepper. Fold foil over to seal into packets. Place packets on opposite side of baking sheet from garlic bread.
- Bake on top rack until cheese is browned and lobster meat is tender and cooked through, 10-15 minutes. Carefully open foil to check lobster; shells and meat should be red. If needed, reseal and bake longer. Transfer garlic bread and lobster to a cutting board.
- In a large bowl, toss mixed greens, tomatoes, cucumber, green goddess dressing, a drizzle of olive oil, salt and pepper until evenly coated.
- Halve garlic bread diagonally. Once lobster is cool enough to handle, press on shells to crack, then peel away shell. Remove meat and cut into bite-size pieces. Divide salad among plates, top with lobster and serve with garlic bread.
