Increase heat to medium-high and bring to a simmer. Cook, stirring occasionally, until the relish has thickened and the water has evaporated, 2-4 minutes. Remove from heat and set aside to cool.
- In a medium bowl, combine the Dijon mustard, mayonnaise, remaining vinegar and 1 teaspoon sugar. Add the red cabbage and carrot mix and toss to coat. Season with salt and pepper.
