Instructions

  1. Preheat the broiler to high (or oven to 500°F). Wash and dry all produce. Slice the zucchini into ½-inch-thick rounds. Pick the oregano leaves from the stems and roughly chop; discard stems.
  2. Place the zucchini rounds on a lightly oiled baking sheet. Season with salt, pepper and ½ teaspoon Italian seasoning. Broil until softened and browned, 5-7 minutes. Keep an eye on them to prevent burning. Remove from the broiler and reset the oven to 450°F.
  3. Heat a drizzle of olive oil in a large pan over medium-high heat. Remove the sausage from its casings and add to the pan along with half the chopped oregano. Break the meat into pieces and cook, tossing, until browned and no longer pink, 4-6 minutes. Remove from heat.
  4. Place the flatbreads on another lightly oiled baking sheet. Season with salt and pepper. Spread a thin layer of crushed tomatoes over each flatbread (about half the can). Sprinkle with salt, pepper and the remaining ½ teaspoon Italian seasoning. Scatter the mozzarella evenly over the sauce, then top with the cooked sausage and broiled zucchini.
  5. Bake the pizzas until the flatbread edges are golden brown and the cheese is melted, 4-6 minutes.
  6. Sprinkle the remaining fresh oregano over the hot pizzas, slice and serve.

Recipe Tips

For extra char on the zucchini, broil until the edges are deeply browned but not burnt.

If you prefer a crispier crust, bake the flatbreads for 1-2 minutes before adding toppings.

Feel free to substitute the chicken sausage with your favorite Italian sausage or plant-based alternative.

FAQ

Can I use a different type of sausage?

Yes, you can substitute any Italian-style sausage (pork, turkey or plant-based) for the chicken sausage. Just remove the casings and cook as directed.

What if I don't have a broiler?

You can roast the zucchini in a 500°F oven for about 10-12 minutes, flipping halfway, until tender and browned.

Can I make these pizzas ahead of time?

These pizzas are best enjoyed fresh out of the oven. However, you can prep the toppings (broil zucchini, cook sausage) in advance and assemble just before baking.
