Instructions

  1. Preheat the broiler to high or oven to 500°F. Wash and dry all produce. Slice zucchini into ½-inch-thick rounds. Pick oregano leaves from stems and discard stems; roughly chop leaves.
  2. Place zucchini on a lightly oiled baking sheet. Season with salt, pepper and ½ teaspoon Italian seasoning (you’ll use more later). Broil until softened and browned, 5-7 minutes. Keep an eye on it to prevent burning. Remove sheet from broiler and adjust oven temperature to 450°F.
  3. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the chicken sausage and half the oregano. Cook, breaking up the meat, until browned and cooked through, 4-6 minutes. Remove from heat. Meanwhile, place flatbreads on another baking sheet and toast in the oven until lightly browned, 5-7 minutes.
  4. Spread a thin layer of crushed tomatoes over the toasted flatbreads (about half the box). Season with salt, pepper and remaining ½ teaspoon Italian seasoning. Evenly top with cooked sausage, broiled zucchini and mozzarella cheese.
  5. Bake flatbreads until edges are golden brown and cheese is melted, 4-6 minutes.
  6. Sprinkle with remaining oregano to taste, cut into slices and serve.

Recipe Tips

For extra crispiness, broil the flatbreads for a minute after baking.

If you don’t have a broiler, roast the zucchini at 500°F until tender.
