Instructions

  1. Bring a large pot of salted water to a boil. Add the orecchiette and cook until al dente, about 15-17 minutes, stirring occasionally. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  2. Meanwhile, wash and dry all produce. Halve, peel and thinly slice the shallot. Roughly chop the sage leaves until you have 1 tablespoon. Thinly slice the mushrooms. Finely chop the garlic.
  3. In a medium microwave-safe bowl, combine the butternut squash with a splash of water. Cover with plastic wrap and poke a few holes in the wrap. Microwave until tender, about 2 minutes. Drain if necessary.
  4. Heat a large drizzle of olive oil in a large pan (preferably nonstick) over medium-high heat. Add the butternut squash and 1/4 teaspoon sugar. Cook, stirring occasionally, until browned and slightly crispy, 2-3 minutes. Add the shallot and chopped sage. Cook, stirring, until lightly browned, 1-2 minutes. Add a pinch of chili flakes and season with salt.
  5. Add the mushrooms to the pan and cook, stirring occasionally, until lightly browned, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute. Season with salt and pepper.
  6. Add the drained pasta and 3 tablespoons butter to the pan. Stir until the butter has melted. Add the reserved pasta cooking water and half of the Parmesan. Stir until thoroughly combined. Season with salt and pepper to taste.
  7. Divide the pasta between bowls. Sprinkle with the remaining Parmesan and additional chili flakes if desired.

Recipe Tips

For extra flavor, toast the sage briefly in butter before adding other ingredients.

If you prefer a vegetarian dish, ensure your Parmesan is made with vegetarian rennet.

Adjust the chili flakes to your spice preference; omit for a milder dish.
