Instructions

  1. Pat salmon dry with paper towels. Drizzle with olive oil and season all over with half the blackening spice (use all for 4 servings), salt and pepper. Heat a drizzle of cooking oil in a large nonstick pan over medium-high heat. Place salmon skin-side down and cook until skin is crisp, 5-7 minutes. Flip and cook until cooked through, 1-2 minutes more. Lower heat if browning too quickly. Transfer to a plate.
  2. While salmon cooks, halve the grape tomatoes. Halve, peel and thinly slice the shallot. Place shallot in a small bowl of cold water and set aside.
  3. In a large bowl, whisk together guacamole, yogurt, red wine vinegar, garlic powder, sugar and a drizzle of olive oil. Season with salt and pepper.
  4. Drain the shallot. To the bowl with dressing, add mixed greens, tomatoes, shallot, feta and sunflower seeds. Toss until evenly coated. Divide salad between plates, top with salmon and serve.

For extra crispy skin, make sure the salmon is patted very dry before seasoning.
