Instructions

  1. Peel and dice the onion. Zest and juice the lime. Chop the cilantro.
  2. In a small bowl, combine the mayonnaise, hot sauce, half the lime juice and a pinch of salt and pepper. Stir in the coleslaw mix and half the cilantro. Set aside.
  3. Heat a drizzle of oil in a large skillet over medium-high heat. Add the diced onion and cook, stirring, until softened, about 2-3 minutes.
  4. Add the BBQ pulled chicken to the skillet and cook, breaking it up with a spoon, until heated through, about 2 minutes. Stir in the remaining lime juice and season with salt and pepper to taste.
  5. Warm the flour tortillas in the microwave or a dry skillet.
  6. Fill each tortilla with the BBQ chicken mixture. Top with the spicy slaw and garnish with the remaining cilantro. Serve immediately.
