Instructions

  1. Preheat your oven to 425°F. Cut the potatoes into wedges. Toss with a drizzle of cooking oil, garlic powder, salt and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  2. While the potatoes cook, prepare the special sauce: in a small bowl, combine sour cream, ketchup, Dijon mustard, white wine vinegar and sugar. Stir until smooth. Season with salt and pepper to taste. Set aside.
  3. Slice the onion into thick rings. Heat a drizzle of oil in a skillet over medium-high heat. Add onion rings and cook for 3-4 minutes per side until softened and lightly charred. Remove from pan.
  4. Form the ground beef into two patties, about 1/2-inch thick. Season generously with salt and pepper. In the same skillet, cook patties for 3-4 minutes per side for medium doneness. During the last minute, top each patty with cheddar cheese and cover the pan to melt.
  5. Slice the tomato into rounds. Toast the potato buns lightly in the skillet or oven.
  6. Assemble burgers: spread special sauce on the bottom bun, add the patty with melted cheese, top with griddled onion and tomato slices. Close with top bun.
  7. Serve burgers with garlic potato wedges and extra special sauce on the side.

Recipe Tips

For extra crispy wedges, soak cut potatoes in cold water for 30 minutes before roasting.

Let the burger patties rest for a few minutes after cooking to keep them juicy.

You can double the special sauce recipe if you like extra for dipping.
