Instructions

  1. Bring a large pot of salted water to a boil. Cook ramen noodles according to package directions until tender. Drain and divide among bowls.
  2. While noodles cook, prepare the broth: In a medium pot, combine 4 cups water, pork ramen stock concentrate, chicken stock concentrate, soy sauce and 1 cup water. Bring to a simmer over medium heat, stirring to dissolve concentrates. Keep warm.
  3. Season chicken cutlets with salt and pepper. Heat 1 tablespoon cooking oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 4-5 minutes per side. Transfer to a cutting board and slice thinly.
  4. In the same skillet, add remaining 1 tablespoon oil. Add sliced mushrooms and cook until browned, about 4 minutes. Add minced garlic and grated ginger; cook 1 minute until fragrant.
  5. Add spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper.
  6. To make chili garlic oil: In a small bowl, combine sesame oil, chili flakes and sesame seeds. Microwave for 15 seconds or heat in a small pan until fragrant.
  7. Assemble bowls: Divide the mushroom-spinach mixture among the noodle bowls. Top with sliced chicken. Ladle hot broth over everything. Drizzle with chili garlic oil, sprinkle with crispy fried onions and sliced scallions. Serve immediately.

Recipe Tips

For extra flavor, marinate the chicken in a splash of soy sauce and sesame oil for 10 minutes before cooking.

If you prefer a milder broth, reduce the chili flakes or omit the chili garlic oil entirely.

Use fresh ramen noodles if available; they cook faster and have a better texture.
