- Heat a drizzle of olive oil in the empty pot over medium heat. Add the scallion whites and 1 teaspoon Italian seasoning; cook, stirring, for 1 minute. Whisk in the cheese roux concentrate and 1 cup of the reserved pasta cooking water. Cook, whisking, until slightly thickened, 2-3 minutes. Reduce the heat to medium-low and whisk in the cream cheese until smooth.
- Add the drained farfalle, peas, half the Parmesan (save the rest for serving), half the lemon zest, 2 tablespoons butter and a big squeeze of lemon juice to the pot with the sauce.
