Instructions

  1. Adjust oven rack to middle position (top and middle for 4 servings) and preheat broiler to low. Wash and dry produce. Halve, peel and thinly slice the onion.
  2. Heat a drizzle of oil in a medium nonstick pan over medium-high heat. Add onion and cook, stirring occasionally, until browned and softened, 3-5 minutes. Add 1 teaspoon sugar (2 teaspoons for 4 servings) and a splash of water; cook until caramelized, 2-3 minutes more. Season with salt and pepper.
  3. Meanwhile, trim, peel and cut carrots into sticks (about 3 inches long and 1/3 inch thick). Core, deseed and dice half the green pepper into 1/4-inch pieces; cut remaining pepper into 1/4-inch strips. In a medium bowl, combine marinara and half the garlic powder. Season with salt and pepper.
  4. Place pitas on a lightly oiled baking sheet (use two sheets for 4 servings). Spread sauce evenly over pitas. Set out mozzarella, diced green pepper, caramelized onion and pepperoni in separate bowls for everyone to build their own pita pizzas.
  5. Broil pitas on middle rack until cheese melts and edges are golden, 4-5 minutes (for 4 servings, broil on top and middle racks, swapping halfway). Transfer to a cutting board.
  6. Let cool slightly, then cut pitas into wedges. Divide among plates. Serve with green pepper strips, chili flakes, remaining garlic powder, carrot sticks and ranch dressing on the side.
