Instructions

  1. Adjust oven racks to top and bottom positions and preheat to 450°F. Wash and dry produce. Line a baking sheet with foil and place a wire rack on top. Rub a large drizzle of olive oil inside an 8×8-inch baking dish (for 4 servings, use two dishes). Place pizza dough in the dish and roll to coat in oil. Cover with a clean kitchen towel and let rest in a warm place for 30 minutes.
  2. While dough rests, halve the tomatoes. Trim and halve the cucumber lengthwise, then cut crosswise into ¼-inch half-moons. Trim and discard the root end of the lettuce; chop leaves into bite-size pieces. Grate Parmesan cheese into a small bowl. Combine tomatoes, cucumber and lettuce in a medium bowl. Refrigerate until step 5.
  3. In a large bowl, mix cornstarch, half the garlic powder, salt and pepper. Pat chicken wings dry with paper towels (dry thoroughly for crispiness). Place wings in the bowl with the cornstarch mixture and toss with a drizzle of oil until evenly coated. Arrange wings in a single layer on the wire rack on the prepared baking sheet. Bake on the top rack until lightly crisped and cooked through, 25-35 minutes.
  4. After dough has rested 30 minutes, gently press it into a rough square. Carefully lift the dough by the top two corners and let gravity stretch it; repeat with the bottom two corners. Gently press again until the dough is even and covers most of the baking dish. Spread marinara sauce evenly over the dough and sprinkle with mozzarella. Bake pizza on the bottom rack until edges are dark brown and center is cooked through, 25-30 minutes.
  5. When wings have 5 minutes left, drizzle Italian dressing over the salad bowl and toss to coat. Season with salt and pepper to taste.
