Ingredients
Instructions
- Preheat oven to 425°F (220°C) and position rack to top. Wash and dry all produce. Halve, peel and finely dice the onion. Cut potatoes into ½-inch thick wedges. Thinly slice the tomato into rounds. Halve, peel and mince the shallot until you have 2 tablespoons (4 tablespoons for 4 servings). Halve the potato buns.
- Toss the potato wedges on a baking sheet with a drizzle of oil, ¾ teaspoon garlic powder (1½ teaspoons for 4 servings), salt and pepper. Roast on the top rack until browned and crisp, 20-25 minutes.
- Meanwhile, in a small bowl, combine the minced shallot, white wine vinegar, 1 teaspoon sugar (2 teaspoons for 4 servings) and a pinch of salt. In another small bowl, combine ketchup, Dijon mustard, sour cream, remaining garlic powder and 1 teaspoon sugar (2 teaspoons for 4 servings). Set aside.
- Heat a drizzle of oil in a large pan over medium-high heat. Add the diced onion and cook, stirring occasionally, until browned and softened, 5-7 minutes. Season with salt and pepper. Transfer to a plate.
- While the onion cooks, form the ground beef into two patties (four patties for 4 servings), each slightly wider than a burger bun. Season generously with salt and pepper. Heat a drizzle of oil in the same pan over medium-high heat. Add the patties and cook almost to desired doneness, 3-5 minutes per side. Top each patty with cheddar cheese and cover the pan until the cheese melts and patties are cooked to your liking, 1-2 minutes more.
- While the cheese melts, toast the potato buns until golden brown. Drain the pickled shallot, discarding the liquid and stir it into the sauce bowl. Assemble the burgers: place the patties on the toasted buns, top with caramelized onion, tomato slices and a generous spoonful of special sauce. Serve with the crispy potato wedges and any remaining sauce on the side for dipping.
