Instructions

  1. Cook the rice: In a small pot, combine 0.5 cup basmati rice, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

  4. Pour in the coconut milk and bring to a simmer, scraping up any browned bits from the bottom of the pan. Return the chicken to the skillet along with any accumulated juices. Add the bell pepper (seeded and sliced into strips). Simmer for 5-7 minutes, until the chicken is cooked through and the sauce has thickened slightly.
  5. Stir in 2 tablespoons sour cream until well combined. Taste and adjust seasoning with salt and pepper if needed. Serve the curry over the cooked basmati rice, garnished with the remaining scallion greens (sliced).
