- Preheat oven to 425°F. Dice sweet potato into 1/2-inch cubes. Toss with 1 tsp oil, salt and pepper. Spread on a baking sheet and roast until tender and lightly browned, about 20-25 minutes.

- Pat chicken cutlets dry. Season both sides with southwest spice blend, salt and pepper. Heat 1 tsp oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 3-4 minutes per side. Let rest, then slice.
- Slice scallions. Stir scallions and remaining lime juice into the cooked rice.
- Assemble bowls: Divide lime rice among bowls. Top with roasted sweet potato, sliced chicken and salsa. Drizzle with chipotle crema. Serve immediately.
