- In a medium pot, melt the butter over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in the couscous and remaining thyme leaves. Season with salt and pepper. Cook, stirring, until the couscous is lightly toasted, 2-3 minutes.
- Stir the stock concentrate and 1½ cups water into the pot. Bring to a boil, then reduce heat to low and simmer until the couscous is al dente, 10-12 minutes.
- Add half the roasted vegetables, half the feta cheese and a squeeze of lemon to the pot with the couscous. Toss to combine. Season with salt and pepper to taste. Divide the couscous mixture between plates, top with the roasted chickpeas and remaining vegetables and sprinkle with the remaining feta cheese.
