Instructions

  1. Bring a large pot of salted water to a boil. Add gnocchi and cook according to package directions until they float. Drain and set aside.
  2. While gnocchi cooks, heat a drizzle of oil in a large skillet over medium-high heat. Add chicken sausage and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, add a little more oil if needed. Add diced bell pepper and cook until softened, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in the cream sauce base, chicken stock concentrate and 1/4 cup water. Bring to a simmer and cook until slightly thickened, about 2 minutes.
  5. Return the cooked sausage to the skillet. Add the cooked gnocchi and toss to coat in the sauce. Stir in half the grated Parmesan cheese until melted.
  6. Serve in bowls, topped with remaining Parmesan, sliced scallions and diced tomato.

Recipe Tips

For extra flavor, use a mix of sweet and spicy Italian chicken sausage.

If the sauce is too thick, thin it with a splash of pasta water or milk.

Garnish with fresh basil or parsley for a pop of color.
