- Preheat the broiler to high (or set the oven to 500°F/260°C). Transfer the skillet to the middle rack and broil until the cheese is melted and lightly browned, 2-3 minutes. Remove from the oven and drizzle the lime crema over the top, then garnish with the scallion greens. Divide among plates and serve with the remaining lime wedges on the side.
