- Cut the delicata squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on the prepared baking sheet. Roast for 20-25 minutes, until tender when pierced with a fork.

- In a large skillet, heat the olive oil and butter over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add the garlic and cook for 30 seconds until fragrant.
- Add the kale to the skillet and cook, stirring, until wilted, about 2-3 minutes. Season with salt and pepper.
- Reduce the heat to low. Stir in the cooked couscous, dried cranberries, cream cheese, lemon zest, lemon juice and half of the thyme leaves. Mix until the cream cheese is melted and everything is well combined. Taste and adjust seasoning with salt and pepper.
- Once the squash is roasted, carefully flip the halves cut-side up. Divide the couscous mixture evenly among the squash cavities, mounding it slightly.
- Sprinkle the Parmesan cheese over the stuffed squash. Return to the oven and broil on high for 2-3 minutes, until the cheese is melted and golden brown. Watch closely to prevent burning.
- Remove from the oven and top with the remaining thyme leaves and the walnuts. Serve warm.
