Instructions

  1. Cook the jasmine rice according to package directions. Fluff with a fork and set aside.
  2. In a small bowl, whisk together the sweet soy glaze, Szechuan paste, rice wine vinegar, sugar and 2 tablespoons water. Set aside.
  3. Pat the chicken breast dry and season with salt and pepper. Sprinkle with cornstarch and toss to coat.
  4. Heat 1 teaspoon cooking oil in a large skillet or wok over high heat. Add the chicken and cook, stirring occasionally, until golden and cooked through, about 4-5 minutes. Transfer to a plate.
  5. Reduce heat to medium-high. Add the remaining 1 teaspoon oil and butter. Add the bell pepper (diced) and cook for 2 minutes, until slightly softened. Add the garlic (minced) and cook 30 seconds.
  6. Return the chicken to the skillet. Pour in the sauce mixture and stir to coat. Cook for 1-2 minutes until the sauce thickens.
  7. Stir in the scallions (sliced) and peanuts. Cook for 1 minute.
  8. Serve the stir-fry over the jasmine rice. Garnish with chili flakes.

Recipe Tips

For extra crunch, toast the peanuts in a dry pan for 1-2 minutes before adding.

Adjust the heat by adding more or less chili flakes.
