Instructions

  1. Wash and dry produce. Trim and thinly slice scallions on a diagonal, separating whites from greens. Trim and discard root end from lettuce; separate leaves. Reserve two whole leaves for assembling burgers. Chop remaining leaves into bite-size pieces.
  2. In a medium bowl, combine ground beef, scallion whites, chicken stock concentrate, panko, ½ teaspoon salt and pepper. Form into two patties, each slightly wider than a burger bun. Heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook until browned and cooked through, 3-5 minutes per side. In the last minute of cooking, top patties with half the katsu sauce; cover pan and cook until sauce is warmed through and patties are coated, 40-60 seconds more.
  3. Meanwhile, halve and toast potato buns until golden brown. In a small bowl, whisk together mayonnaise and remaining katsu sauce.
  4. In a large bowl, toss chopped lettuce with sesame dressing. Season with salt and pepper if desired.
  5. Spread cut sides of buns with katsu mayo. Fill buns with patties and reserved whole lettuce leaves.
  6. Divide burgers and salad between plates. Sprinkle salad with sliced almonds and scallion greens. Serve.

Recipe Tips

For extra juicy patties, avoid overmixing the beef mixture.

Toast the buns just before assembling to keep them crisp.

If you prefer a spicier kick, add a dash of sriracha to the katsu mayo.

FAQ

Can I use ground pork instead of beef?

Yes, ground pork works well and adds a different flavor profile. Just ensure it’s cooked through to 160°F.

What can I substitute for katsu sauce?

You can mix equal parts ketchup, Worcestershire sauce and soy sauce with a little sugar to mimic the sweet-savory flavor.

How do I store leftovers?

Store the patties and salad separately in airtight containers in the refrigerator for up to 2 days. Reheat patties in a skillet.
