Fan half the cheese wedges at one corner of a large board or platter and place the remaining half at the opposite corner. Next to one cheese pile, arrange half the salami and half the coppa in overlapping rows (arc shape). Repeat with the remaining salami and coppa on the opposite side. Fold each piece of prosciutto into a loose bundle and place next to the salami and coppa. Place the hot honey peach jam and Dijon mustard in small bowls on the board. Fill the remaining gaps with the spiced peanuts, pickles, apple slices and pretzel bites. Serve immediately.
