Instructions

  1. Preheat oven to 425°F. Bring a large pot of salted water to a boil.
  2. Trim ends of zucchini, cut into ½-inch rounds. Place on a baking sheet, drizzle with olive oil, season with salt and pepper. Roast until tender and lightly browned, about 15-18 minutes.
  3. Cook spaghetti according to package directions until al dente. Reserve ½ cup pasta water before draining.
