Season with salt (about ¾ teaspoon for 2 servings; 1½ teaspoons for 4) and pepper. Form into 10-12 meatballs, each about 1½ inches in diameter (20-24 for 4 servings). Place on a baking sheet.
- On a second baking sheet, toss the zucchini pieces and onion wedges with a drizzle of olive oil, salt and pepper. Roast on the top rack until browned and tender, 18-20 minutes. Roast the meatballs on the middle rack until browned and cooked through, 15-18 minutes.
- In a small bowl, combine the sour cream and a squeeze of lemon juice to taste. Add water, 1 teaspoon at a time, until the mixture reaches a drizzling consistency. Season with salt and pepper.
- Fluff the rice with a fork, then stir in the roasted vegetables, lemon zest and half the almonds. (If the pot is overflowing, transfer to a large bowl.) Season with salt and pepper. Divide the rice mixture between plates. Top with meatballs, drizzle with the lemon sauce and hot sauce to taste. Sprinkle with remaining almonds. Serve with lemon wedges on the side.
