Instructions

  1. Let the truffle butter sit at room temperature to soften. Meanwhile, wash and dry all produce.
  2. Trim the stems from the cremini mushrooms and slice them thinly. Halve the yellow onion, peel it and slice thinly as well.
  3. Heat a drizzle of olive oil in a large nonstick pan over medium-high heat. Add the sliced onion and mushrooms. Cook, stirring occasionally, until they are browned and softened, about 8-10 minutes. Season with salt and pepper to taste. Transfer the mixture to a medium bowl and set aside. Wipe the pan clean.
  4. Spread the softened truffle butter evenly on one side of each sourdough slice. Place two slices buttered side up on a clean work surface. Top each with the sautéed mushroom-onion mixture and then with white cheddar cheese. Place the remaining bread slices on top, buttered side down.
  5. Heat a drizzle of olive oil in the same pan over medium heat. Add the sandwiches (work in batches if needed) and cook until the bread is golden brown and the cheese has melted, about 2-3 minutes per side.
  6. Remove from heat, slice each sandwich diagonally in half and serve immediately.
