Ingredients
Instructions
- Preheat oven to 425°F. Trim green beans and toss with a drizzle of oil, salt and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and lightly browned.
- In a small pot, combine 3/4 cup water, a pinch of salt and the jasmine rice. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until rice is tender. Remove from heat and let stand covered for 5 minutes. Fluff with a fork.
- While rice cooks, grate the ginger (peel first). Thinly slice scallions, separating white and green parts. Zest and juice the lime. Roughly chop peanuts.
- In a bowl, combine ground pork, panko, half the ginger, half the scallion whites, half the lime zest and a pinch of salt. Mix gently and form into 12-14 meatballs.
- Heat a large nonstick skillet over medium-high heat. Add a drizzle of oil and cook meatballs until browned on all sides, about 5-7 minutes. Remove meatballs and set aside.
- In the same skillet, add remaining ginger and scallion whites. Cook 30 seconds. Stir in coconut milk, sweet Thai chili sauce, ponzu sauce and remaining lime zest. Bring to a simmer.
- Return meatballs to skillet, spoon sauce over them and simmer for 5 minutes until cooked through. Stir in a squeeze of lime juice.
- Serve meatballs and sauce over coconut rice. Top with roasted green beans, sliced scallion greens and chopped peanuts.
- Enjoy!
Recipe Tips
For extra flavor, toast the peanuts in a dry skillet before chopping.
If the sauce is too thick, thin with a splash of water or chicken broth.
Don’t overmix the meatball mixture to keep them tender.
