Instructions

  1. Pat the steelhead trout dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat a drizzle of cooking oil in a large nonstick pan over medium-high heat. Place the trout skin-side down and cook until the skin is crispy, about 5-7 minutes. Set aside to pickle, tossing occasionally.
  4. Remove any large stems from the kale and chop the leaves into bite-sized pieces. In a large bowl, combine the kale with a drizzle of olive oil and a pinch of salt. Massage the kale with your hands until tender, about 1 minute. Add the coleslaw mix, season with salt and pepper and add 1 teaspoon of the pickling liquid from the vegetables.
