- Zest the lime and squeeze the juice. Peel and grate the ginger. Finely chop the cilantro. In a small bowl, combine the lime zest, half the lime juice, half the grated ginger and a pinch of salt. Fluff the cooked rice and stir in the lime-ginger mixture and half the cilantro. Cover and keep warm.
- Cut the pineapple into ½-inch chunks. In a small bowl, mix the sweet Thai chili sauce with the remaining lime juice and a pinch of salt to make the glaze.
- Season the chicken cutlets with salt and pepper. Heat a large non-stick skillet over medium-high heat and add a drizzle of oil. Cook the chicken for 3-4 minutes per side, until golden and cooked through. Add the pineapple chunks to the skillet during the last 2 minutes of cooking, letting them char slightly.
- Pour the chili-lime glaze over the chicken and pineapple in the skillet. Toss to coat and let it simmer for 30 seconds until the glaze thickens slightly.
