Instructions

  1. Preheat your oven to 425°F. Cut the broccoli into small florets. Mince the garlic. Dice the red onion and tomato.
  2. On a baking sheet, toss the broccoli with half the cooking oil, half the fry seasoning and a pinch of salt and pepper. Roast for 15-20 minutes until tender and lightly browned.
  3. While the broccoli roasts, make the tomato onion jam. In a small saucepan, heat the remaining oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the diced tomato, balsamic vinegar, ketchup, sugar and a pinch of salt. Simmer until thickened, about 10 minutes. Set aside.
  4. In a small bowl, mix the sour cream and mayonnaise. Season with a pinch of salt and pepper. Set aside.
  5. Divide the ground beef into two equal portions. Flatten each into a thin patty. Place half the cheddar cheese in the center of one patty, then top with the second patty, sealing the edges to enclose the cheese. Repeat to make the second stuffed patty. Season both sides with salt and pepper.
  6. Heat a skillet or grill pan over medium-high heat. Cook the patties for 4-5 minutes per side for medium doneness or until desired doneness. During the last minute, place the brioche buns cut-side down on the pan to toast.
  7. To assemble, spread the sour cream mixture on the bottom buns. Place the patties, then top with the tomato onion jam. Close with the top buns. Serve with the roasted broccoli on the side.
