Instructions

  3. In a separate bowl, toss the chopped chicken breast with cornstarch, salt and pepper until evenly coated.
  4. Heat 1 teaspoon of cooking oil in a large non-stick skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until golden and cooked through, about 4-5 minutes. Transfer to a plate.
  5. Reduce heat to medium. Add the remaining 1 teaspoon oil to the skillet. Add the bell pepper (sliced into strips), pineapple (cut into bite-sized pieces) and half of the scallions (sliced, white and light green parts). Cook for 2-3 minutes until slightly softened.
  6. Add the ginger (peeled and grated or minced) and cook for 30 seconds until fragrant.
  7. Return the chicken to the skillet. Pour the sauce over everything and stir to combine. Cook for 1-2 minutes until the sauce thickens and coats the ingredients.
  8. Stir in the butter until melted and glossy.
  9. To serve, divide the ginger rice between plates. Top with the stir-fry and garnish with the remaining scallions (green parts, sliced) and peanuts (roughly chopped).
