Instructions

  1. Cook the rice: In a small pot, combine 0.5 cup jasmine rice with 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

  4. Heat 1 tablespoon cooking oil in a large skillet or wok over medium-high heat. Add the ground turkey, season with salt and pepper and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Transfer to a plate.
  5. In the same skillet, add a drizzle more oil if needed. Add the white parts of the scallions, onion and bell pepper. Cook for 2-3 minutes until softened. Add the green beans and cook for another 2-3 minutes until bright green and tender-crisp.
