Instructions

  1. Bring a large pot of salted water to a boil. Add ramen noodles and cook according to package directions until tender. Drain and set aside.
  2. While the noodles cook, peel and grate the carrot. Thinly slice the scallions, separating white and green parts. Roughly chop the peanuts.
  3. In a small bowl, whisk together the sweet soy glaze, rice wine vinegar, Szechuan paste, peanut butter and sugar until smooth. Set aside.
  4. Heat a large skillet or wok over medium-high heat. Add cooking oil and ground pork. Cook, breaking up the meat, until browned and cooked through, about 4-5 minutes. Season with salt and pepper.
  5. Add the grated carrot and white parts of scallions to the skillet. Cook for 1 minute until slightly softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  6. Pour the peanut sauce mixture into the skillet, along with the pork ramen stock concentrate and 1/4 cup water. Stir to combine and let simmer for 2 minutes until the sauce thickens slightly.
  7. Add the cooked ramen noodles and butter to the skillet. Toss everything together until the noodles are well coated in the sauce and heated through, about 1-2 minutes.
  8. Divide the stir-fry between bowls. Garnish with the sliced green scallions, chili flakes and chopped peanuts. Serve immediately.

Recipe Tips

For extra heat, add more chili flakes or a drizzle of chili oil.

If you don’t have sweet soy glaze, substitute with 3 tablespoons soy sauce mixed with 1 tablespoon brown sugar.

Feel free to swap ground pork with ground chicken or turkey for a lighter option.
