Instructions

  1. Adjust oven rack to middle position and preheat to 400°F. Wash and dry all produce. Halve, peel and thinly slice the onion. Halve, core and thinly slice the bell pepper into strips.   4. In another small bowl, mix the sour cream, a squeeze of lime juice and lime zest to taste. Add water 1 teaspoon at a time until the mixture is drizzling consistency. Season with salt and pepper.
  5. Pat the chicken dry with paper towels and thinly slice into strips. Season with salt and pepper. Heat another drizzle of oil in the same pan over medium-high heat. Add the chicken in a single layer and cook, stirring occasionally, until lightly browned, about 2-3 minutes. Return the cooked vegetables to the pan and add the remaining Southwest spice blend. Cook until the chicken is cooked through, 2-3 minutes more.
  6. Place the tortillas on a baking sheet in a single layer. Sprinkle evenly with shredded cheddar. Bake until the cheese is melted, 1-2 minutes. Do not overbake; the tortillas should remain soft.
  7. Divide the chicken mixture among the tortillas. Drizzle with the lime crema and top with pickled jalapeño to taste. Serve with remaining lime wedges.
