Instructions

  1. Bring a large pot of salted water to a boil. Wash and dry produce. Halve the green pepper lengthwise, remove seeds and ribs, then slice into thin strips. Trim and thinly slice scallions, separating white parts from green tops.
  2. Once water is boiling, add cavatappi and cook until al dente, 9-11 minutes, stirring occasionally. Reserve 1 cup of pasta cooking water, then drain the pasta.
  3. Meanwhile, heat a drizzle of oil in a large skillet over medium-high heat. Add the green pepper strips, season with salt and pepper and cook until slightly softened, 4-5 minutes, stirring occasionally.
  4. Add another drizzle of oil to the skillet with the peppers. Add the ground beef and scallion whites. Season with Southwest spice blend, salt and pepper. Cook, breaking up the meat, until browned and cooked through, 4-6 minutes. If there is excess grease, carefully pour it off. Stir in half the diced tomatoes (or all for 4 servings) and cook for 30 seconds.
  5. Add ½ cup reserved pasta water (¾ cup for 4 servings) and the beef stock concentrates to the skillet. Season with ½ tsp salt (1 tsp for 4) and a pinch of pepper. Bring to a simmer and cook until slightly thickened, 2-3 minutes, stirring occasionally.
  6. Reduce heat to low. Stir in the drained cavatappi, sour cream, smoky red pepper crema, half the Mexican cheese, butter and hot sauce to taste. Season with salt and pepper. If the sauce seems dry, add more reserved pasta water a splash at a time until the pasta is well coated.
  7. Sprinkle the remaining Mexican cheese over the top. Cover the skillet and let the cheese melt, 1-2 minutes. Garnish with scallion greens and serve immediately.
