- In a medium pot, combine farro, 3 cups water and a generous pinch of salt. Bring to a boil, then reduce heat and simmer until farro is tender, 25-30 minutes. If excess water remains, drain it off. If water evaporates before farro is done, add a splash more water.
- While farro cooks, prepare the vegetables: Halve, peel and thinly slice the shallot. Halve the tomatoes lengthwise, then cut crosswise into ¼-inch half-moons. Halve, core and thinly slice the bell pepper into strips. Roughly chop the dill.
- In a small microwave-safe bowl, combine the sliced shallot, white wine vinegar, 1 tablespoon water, ½ teaspoon sugar and a pinch of salt. Cover with plastic wrap and microwave for 30-45 seconds. Stir and set aside to pickle.
- In a medium bowl, combine the tomatoes, half of the za’atar spice (use all for 4 servings), a drizzle of olive oil, salt and pepper. Set aside to marinate.
- In a small bowl, mix together the yogurt, half of the chimichurri and half of the cumin (use all chimichurri and all cumin for 4 servings). Set aside.
- Pat the shrimp dry with paper towels. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the shrimp, bell pepper strips, shawarma spice blend, salt and pepper. Cook, stirring occasionally, until shrimp are pink and cooked through, 4-6 minutes.
- Once the farro is done, transfer it to a large bowl and toss with half of the chopped dill, a drizzle of olive oil, salt and pepper.
- Divide the farro among shallow bowls. Top with the shrimp and bell pepper mixture, marinated tomatoes and pickled shallots (drained). Drizzle the chimichurri yogurt sauce over the top and garnish with the remaining dill.
Recipe Tips
For extra flavor, toast the farro in a dry pot for 2 minutes before adding water.
If you prefer a milder pickled shallot, reduce the vinegar to 4 teaspoons.
