Farro Recipes

Farro is a chewy, nutty ancient wheat grain that adds satisfying texture to salads, soups, grain bowls, and warm side dishes. It holds its shape well after cooking, making it especially useful for make-ahead meals and recipes with bold dressings or sauces. Use farro anywhere you want a hearty pantry grain: toss it with roasted vegetables, fold it into brothy soups, serve it under braised meats, or mix it with herbs, citrus, beans, and cheese for a filling vegetarian main. Most farro sold in stores is pearled or semi-pearled, which cooks faster than whole farro. Check the package when possible, but if you are unsure, simmer until tender and drain any excess water like pasta.
