Golden Ricotta Toast with Pear, Hot Honey &Amp; Walnut Arugula Salad

Lunch5 min981 cal / serving

There’s nothing quite like a perfectly toasted slice of sourdough bread. In this recipe, we take that crispy base and spread it with a luscious, lemon-kissed ricotta. Then we layer on juicy slices of pear and crunchy walnuts and finish it all off with a golden drizzle of hot honey for a sweet-spicy kick.

On the side, a simple arugula salad with more pear and walnuts adds a peppery, fresh contrast. It’s a toast that truly has it all-creamy, crunchy, sweet and savory-and it comes together in just 10 minutes.

Instructions

  1. Core the pear and cut it into thin slices. Zest the lemon, then cut it in half and juice one half.
  2. In a small bowl, combine the ricotta, crème fraîche, lemon zest and a squeeze of lemon juice. Stir until smooth and season with a pinch of salt and pepper.
  3. Toast the sourdough slices until golden and crisp. While still warm, rub each slice with the cut side of the remaining lemon half.
  4. Spread the ricotta mixture evenly over each toast.
  5. Top with pear slices and sprinkle with walnuts.
  6. Drizzle hot honey over the toasts.
  7. In a large bowl, toss the arugula with a drizzle of olive oil, a squeeze of lemon juice and a pinch of salt and pepper. Serve alongside the toasts.

Recipe Tips

For extra crunch, toast the walnuts in a dry pan over medium heat for 2-3 minutes before using.

If you don’t have hot honey, mix regular honey with a pinch of cayenne pepper.

Use a ripe but firm pear so it holds its shape when sliced.

FAQ

Can I use a different type of bread?

Yes, any sturdy bread like ciabatta or whole wheat will work, but sourdough gives the best crunch and flavor.

What can I substitute for crème fraîche?

You can use Greek yogurt or sour cream thinned with a little milk.

How do I make this vegan?

Use vegan ricotta, a plant-based crème fraîche or yogurt and ensure the bread is vegan. Omit the hot honey or use agave with chili flakes.
