Instructions

  1. In a small bowl, combine mayonnaise and sriracha to make the sriracha mayo. Set aside.
  2. In another bowl, toss shredded red cabbage with rice wine vinegar, sugar and a pinch of salt. Set aside to pickle slightly.
  3. Thinly slice the green pepper into strips. Pick cilantro leaves from stems and roughly chop.
  4. Heat cooking oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until browned, about 4-5 minutes.
  5. Add sliced green pepper to the skillet and cook for 2 minutes until slightly softened.
  6. Stir in sweet soy glaze and cook for 1-2 minutes until the sauce is sticky and coats the turkey and peppers. Season with salt and black pepper to taste.
  7. Warm the flour tortillas in a dry skillet or microwave until pliable.
  8. Assemble tacos: fill each tortilla with the turkey mixture, top with pickled cabbage slaw, drizzle with sriracha mayo and sprinkle with crispy fried onions and chopped cilantro. Serve immediately.

Recipe Tips

For extra heat, add more sriracha to the mayo or a dash of hot sauce.

If you prefer corn tortillas, they work well too – just warm them before serving.

The slaw can be made ahead and refrigerated for up to an hour.
