Instructions

  1. Bring a large pot of salted water to a boil. Add the spinach and ricotta ravioli and cook until al dente, about 3-4 minutes. Reserve 1/2 cup pasta water, then drain.
  2. While the pasta cooks, heat a large skillet over medium-high heat. Add the Italian chicken sausage mix and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Dice the tomato and thinly slice the scallions. Zest and juice the lemon.
  4. Reduce heat to medium. Add the diced tomato, Italian seasoning and half the scallions to the skillet with the sausage. Cook for 1-2 minutes until the tomato softens.
  5. Stir in the sour cream, chicken stock concentrate and 1/4 cup of the reserved pasta water. Add the lemon zest and juice. Simmer for 1-2 minutes until the sauce thickens slightly.
  6. Add the cooked ravioli to the skillet and toss gently to coat in the sauce. If needed, add more pasta water to loosen the sauce. Season with salt and pepper to taste.
  7. Serve the ravioli topped with the remaining scallions.

Recipe Tips

For extra flavor, use the reserved pasta water to adjust the sauce consistency-it adds a silky texture.

If you prefer a thinner sauce, add more pasta water a tablespoon at a time until desired consistency is reached.

Feel free to substitute the chicken sausage with turkey sausage or plant-based sausage for a different twist.

FAQ

Can I use frozen ravioli instead of fresh?

Yes, just follow the package instructions for cooking frozen ravioli. You may need to adjust the cooking time slightly.

How can I make this dish dairy-free?

Substitute the sour cream with a dairy-free alternative like coconut cream or cashew cream and use a dairy-free ravioli if needed.

Can I add other vegetables?

Absolutely! Sautéed mushrooms, bell peppers or zucchini would be great additions. Add them when you cook the sausage.
