Instructions

  5. Pour in 1 cup of water (1½ cups for 4 servings), then add the mushroom stock concentrate and cream cheese. Stir until the cream cheese is fully melted and the sauce is smooth. Bring to a simmer and season generously with salt and pepper.
  6. Add the cheese tortelloni to the skillet. Cook, stirring gently, until the sauce has thickened and the tortelloni are tender, about 4-6 minutes. If the sauce becomes too thick before the pasta is done, add a splash more water. Turn off the heat.
  7. Stir in the butter until melted and incorporated. Taste and adjust seasoning with salt and pepper. If the sauce seems too thick, add a little more water. (If your skillet is not ovenproof, transfer the mixture to a baking dish at this point.)
