Instructions

  1. Bring a large pot of salted water to a boil. Add the cavatappi and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.
  2. While the pasta cooks, slice the mushrooms and thinly slice the scallions, separating white and green parts.
