Instructions

  1. Wash and dry all produce. Drain and rinse the chickpeas. Halve the cucumber lengthwise, then slice into ½-inch thick half-moons. Halve the grape tomatoes lengthwise. Halve, pit and peel the avocado, then dice into ½-inch pieces. Finely chop the chives. Halve the lemon.
  2. In a large bowl, whisk together the sour cream and half of the hummus. Season with a pinch of salt and pepper. Add the chickpeas, cucumber, tomatoes, avocado and half of the chives. Season with salt and pepper and toss to combine.
  3. In a medium bowl, toss the mixed greens with 1 tablespoon olive oil, the juice from half the lemon and half of the feta. Season with a pinch of salt and pepper.
  4. Gently fold the dressed greens into the chickpea mixture. Taste and adjust seasoning with salt and pepper if needed.
  5. Divide the mixture between two bowls. Dollop the remaining hummus in the center of each bowl. Using the back of a spoon, make a small well in the hummus. Drizzle about 1 teaspoon of olive oil into each well. Season the oil with a pinch of salt and pepper.
  6. Garnish with the remaining feta and remaining chives. Serve with the remaining lemon wedges on the side.

Recipe Tips

For extra crunch, toast the chickpeas in a dry skillet for 2-3 minutes before adding to the bowl.

If you don’t have roasted red pepper hummus, plain hummus works well too-just add a pinch of smoked paprika for flavor.
