Instructions

  1. Cook bacon in a large skillet over medium heat until crispy, about 4-6 minutes. Transfer to a paper towel-lined plate. Reserve 1 tablespoon bacon drippings in the skillet.
  2. While bacon cooks, halve the brioche buns and toast them in a toaster or under the broiler until golden. Set aside.
  3. Slice the tomato into 1/4-inch thick rounds. Set aside.
  4. Prepare the Caesar salad: In a large bowl, combine baby lettuce, croutons, and Caesar dressing. Toss to coat. Set aside.
  5. Make the lobster: Pat lobster tails dry and season with salt and pepper. In the same skillet with reserved drippings, add butter and heat over medium-high. Add lobster tails and cook until opaque and lightly browned, about 2-3 minutes per side. Remove from skillet and let cool slightly. Remove meat from shells and chop into bite-sized pieces.
  6. In a small bowl, mix mayonnaise, Dijon mustard, smoked paprika, and a squeeze of lemon juice. Spread this mixture on the cut sides of the toasted brioche buns.
