Instructions

  1. Cut the fully cooked chicken breasts into ½-inch slices.
  2. In a large bowl, combine the sliced chicken, mixed greens, honey Dijon dressing, sliced almonds and dried cranberries. Toss until everything is evenly coated.
  3. Wrap the flour tortillas in damp paper towels and microwave until warm and pliable, about 30 seconds.
  4. Place each warm tortilla on a clean work surface. Spoon the chicken salad mixture onto the bottom third of each tortilla. Fold the bottom side of the tortilla over the filling, then fold in the left and right sides toward the center. Roll up the tortilla starting from the filled side to form a tight wrap. (Tip: For less mess, place each tortilla on a large piece of foil before rolling, then wrap the foil around the finished wrap. Simply unwrap as you eat!)
  5. Slice each wrap in half diagonally, divide between plates and serve immediately.

Recipe Tips

For a warm wrap, microwave the tortillas with damp paper towels for 30 seconds to make them pliable and less likely to tear.

If you prefer a crunchier texture, toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes before adding to the salad.

To prevent the wraps from getting soggy, assemble them just before serving. If making ahead, keep the filling and tortillas separate and assemble when ready to eat.

FAQ

Can I use a different type of dressing?

Yes, you can substitute the honey Dijon dressing with any creamy dressing you like, such as ranch, Caesar or a simple vinaigrette. Adjust the amount to taste.

How can I make these wraps gluten-free?

Can I add other vegetables?

Absolutely! Feel free to add sliced cucumber, bell peppers or shredded carrots for extra crunch and nutrition.
