Instructions

  1. Wash and dry produce. Melt 1 tablespoon butter in a large nonstick pan over medium-high heat. Add half the panko breadcrumbs and season with salt and pepper. Cook, stirring, until golden brown, 3-5 minutes. Transfer to a small bowl and set aside. Wipe out the pan.
  2. Pat chicken cutlets dry with paper towels. Season both sides with salt, pepper and fry seasoning. Heat a drizzle of oil in the same pan over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes per side. If browning too quickly, reduce heat to medium and cover until done. Transfer chicken to a cutting board.
  3. Meanwhile, zest and quarter the lemon. Halve, core and thinly slice the apple. Add lemon zest to the bowl with panko and stir to combine.
  4. In a large bowl, whisk together honey Dijon dressing, a drizzle of olive oil and juice from one lemon wedge.
  5. Add sliced apple, spinach and half the lemony panko to the dressing. Toss to combine. Taste and adjust with more lemon juice, salt or pepper if desired.
  6. Thinly slice the chicken crosswise. Divide salad among shallow bowls. Top with remaining lemony panko. Fan sliced chicken alongside the salad. Serve with remaining lemon wedges.

Recipe Tips

For extra lemony flavor, add more zest or a squeeze of juice to the panko.

If your chicken cutlets are thick, pound them to an even thickness for quicker cooking.

Taste the dressing before tossing; adjust sweetness or tang with a pinch of salt or extra lemon juice.
