Instructions

  1. Remove the steak from the refrigerator and let it come to room temperature. Bring a medium pot of salted water to a boil. Meanwhile, halve the tomato, remove seeds and chop. Mince the shallot and parsley. Trim and halve the green beans and wax beans. Drain and rinse the cannellini beans.
  2. Blanch the beans: Fill a medium bowl with ice water. Add the green beans and wax beans to the boiling water and cook for about 3 minutes until crisp-tender. Use a slotted spoon to transfer them to the ice water to stop cooking. Drain and set aside.
  3. Make the vinaigrette: In a small bowl, whisk together the minced shallot and parsley with the white wine vinegar and 2 tablespoons olive oil. Season with salt and pepper.
  4. In a large bowl, combine the blanched green beans, wax beans, cannellini beans and chopped tomato. Pour the vinaigrette over and toss to coat. Season with additional salt and pepper if needed. Set aside to marinate.
  5. Heat the remaining 1/2 tablespoon olive oil in a medium pan over medium-high heat. Season the steak on all sides with salt, pepper and herbes de Provence. Sear the steak for 5-7 minutes per side or until cooked to your desired doneness. Transfer to a cutting board and let rest for 5 minutes.
